Preparation:  Aquiares Estate - This is the best coffee of Costa Rica's Atlantic region.  it is selected only from the high-altitude section of the farm, between 1,200 mts and 1,400 mts., exclusively from the middle of the harvesting season (November to January).  The beans are hard and heavy (minimum 90% about Z16, maximum 8% below Z15), with fewer than 8 defects in 350 grams.

Process:  Aquiares honey-processed coffee comes from selected high altitude lots in the farm, which are carefully hand-picked and brought in small batches of separate varieties to be de-pulped at the Beneficio. By leaving the mucilage attached, and allowing coffee to a slow (2-3 weeks) sun drying process, they have come to obtain a cup with a complexity that transcends borders, with unique caramel and fruity characteristics..

Drying: Sun-dried: 2 days pre-drying, ceramic floor. 10 days African raised bed, 28C – 45C range. Final mechanical drying in Guardiola, 1 day.

 

 

The Farm

The largest coffee farm in Costa Rica, Aquiares devotes 80% of its land to growing high quality coffee and the remaining 20% to conservation. Coffee plots are interlaced with over a dozen natural springs and almost 20 kilometers in streams, all protected with buffer zones in line with our Rainforest Alliance certification. These streams form a network of natural corridors through the farm that connect the large protected forests in the two river valleys, providing a healthy environment for the local animals, birds, and plants.


What is a micro lot?


Micro lots are special lots of coffee, selected for their high quality and unique flavour profiles. You will usually find micro lots within larger farms or estates, grown in limited quantities and picked and processed entirely separately to the rest of the farm's lots. As roasters we devote extra time to develop our roast profile to bring out the best of this special coffee.
